Reserve the remaining cordial you can use for brunch beverages, puddings, or to mix additional servings of the drink.

Yields 10 people
To make the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (produces 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Syrup: Place every ingredients in a pan, bring to a light boil, mixing until the sugar dissolves. After that, remove from the stove and let it to cool completely. Pour into an clean bottle, seal keeping it in the fridge, where it will keep for around a month.
Preparing the Cocktail Base: Mix every liquid ingredients into a large bottle, leave to sit for an hour, then pass it through best through a fine cloth, making it perfectly clear.
When ready to serve: Add 85ml of your batch mix into a mixing glass packed with ice, and agitate gently for one minute to cool it down. Filter into an chilled martini glass or equivalent, garnish with the cranberries and complete it with a brief mist with the mandarin essence over the drink.
